Buffalo Chicken Salad

Summer calls for light and yummy lunches! This buffalo chicken salad is out of my favorite recipes and makes for such a good to-go lunch.

Equipment

  • vegetable chopper optional

Ingredients
  

  • 1/4 red onion
  • 1 celery stalk
  • 1/2 large carrot
  • 2 cups shredded chicken I use rotisserie
  • 1/3 cup Frank's Red Hot buffalo sauce
  • 1/3 cup Faige organic greek yogurt
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Tortilla chips For serving

Instructions
 

  • Chop onion, celery, and carrot in vegetable chopper; combine
  • Add the rest of the ingredients; mix

Notes

I serve with tortilla chips but it makes for such a yummy veggie dip too or even on a sandwich.
You can also use mayonnaise instead of greek yogurt or using a mixture of the two! You can use rotisserie chicken if you're wanting to make a quick lunch! However, putting a chicken breast in the slow cooker is such a yummy product - and shreds much much easier!
