Summer calls for light and yummy lunches! This buffalo chicken salad is one of my favorite recipes and makes for such a good to-go lunch. I love recipes that can be meal prepped in advanced and this is one of those recipes! This recipe is also so easy to make, and I love that it has so much protein from the cooked chicken – you can even use leftover chicken – and from the greek yogurt! And surprisingly, the greek yogurt and buffalo wing sauce creates such a delicious and creamy combination with the veggies and chicken.

Buffalo Chicken Salad Recipe

Ingredients

  • 1/4 red onion
  • 1 celery stalk
  • 1/2 large carrot
  • 2 cups shredded chicken
  • 1/3 cup Frank’s Red Hot buffalo sauce
  • 1/3 cup Faige organic greek yogurt
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder

More Ingredient Options

Frank’s and Faige are just what I used, but feel free to use your favorite brand.

You can also use mayonnaise instead of greek yogurt or using a mixture of the two! You can use rotisserie chicken if you’re wanting to make a quick lunch! However, putting a chicken breast in the slow cooker is such a yummy product – and shreds much much easier!

You can include whatever ingredients you’d like but these are just a few more ideas of ingredients that you can add to the recipe as well.

  • Blue cheese dressing
  • Blue cheese crumbles
  • Green onion
  • Bacon
  • Shredded cheese

This chopper is one of my favorites ever! It is so great for saving time, and is especially great if you experience any joint pain in your hands, wrist, or arms! Instructions

Step 1: Prepare Ingredients

Prepare your ingredients by chopping your vegetables and shredding your cooked chicken.

You can buy a rotisserie chicken and shred your chicken from it – or grill a chicken breast on the stove and shred it up with a chicken shredder. I love this method because it can take so much time to shred it with two forks, and hurts my hands after a while.

A vegetable chopper can save you so much time – but of course not a must. If you use the veggie chopper, you can chop the ingredients all together – no need to separate the ingredients by dumping them into bowls each time.

Step 2: Combine Ingredients

In a bowl, or directly into your vegetable chopper, combine your ingredients. Mix well so the vegetables and chicken are completed coated in sauce.

Tortilla Chips

I like to serve it as a dip with tortilla chips – it’s so delicious.

Veggies

You can also serve the buffalo chicken salad as a veggie dip! It’s so delicious with carrots or celery.

Lettuce Wrap

You can also serve it wrapped in romaine lettuce.

Ingredients
  

  • 1/4 red onion
  • 1 celery stalk
  • 1/2 large carrot
  • 2 cups shredded chicken I use rotisserie
  • 1/3 cup Frank's Red Hot buffalo sauce
  • 1/3 cup Faige organic greek yogurt
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Tortilla chips For serving

Instructions
 

  • Chop onion, celery, and carrot in vegetable chopper; combine
  • Add the rest of the ingredients; mix

Notes

I serve with tortilla chips but it makes for such a yummy veggie dip too or even on a sandwich.
