Greek Cucumber Tomato Salad

Ingredients
  

  • 2 cups Persian cucumbers diced
  • 2 cups Roma tomatoes diced (remove any juicy parts)
  • 1 cup red onion diced
  • 1 cup red bell pepper diced
  • 1 Tbsp olive oil
  • ¼ cup feta
  • ¼ cup mint
  • 1 juiced lemon

Instructions
 

  • Chop all of your vegetables with your veggie chopper or knife.
  • Place the chopped vegetables in a mixing bowl.
  • Top with mint, feta, lemon juice, olive oil, and salt & pepper.
  • Stir to mix.
