Pickle de Gallo

I have just recently discovered Grillo's Pickles' "Pickle de Gallo", and wow I've been missing out! Since it's always sold out, I decided to make a copycat recipe! This summery snack was so easy to make and I love that you can cater it to your personal preferences. I hope you love it as much as I do!

Equipment

  • vegetable chopper

Ingredients
  

  • 2 whole pickles (or 8 pickle spears) I used Grillo's hot pickles spears but you can any brand or flavor that you like
  • 1 red bell pepper
  • 1/2 - 1 jalapeño based on spice level preference
  • 1/2 yellow onion
  • 1 garlic glove
  • 1/2 cup of pickle brine I used the brine from the Grillo's hot pickles spears
  • Salt to taste

Instructions
 

  • Finely dice the pickles, red bell pepper, jalapeño, and yellow onion in the vegetable chopper.
  • Mince the garlic, add to mixture.
  • Add the brine and salt.
  • Combine ingredients.
  • You can enjoy right away but it's best served after about 1 hour of marinating.

Notes

You can also add other ingredients if anything else is calling your name! Such as lime, red onion, cucumbers, more spices, etc.
